Protein Pancake..

I really wanted to wake up before the kids this morning and do Tuesday's run again..since discovering that new route I've really been dying to do it again..but the kids read my mind and decided to wake up extra early- so that idea was toast..
I had my green tea and grapefruit while giving kids breakfast and getting Chaya ready for school..once she was gone I put Sarah in the stroller, met up with a friend and did an hour-run walk with her..was nice and relaxing but I cant say I would consider that a workout..there was more walking and talking then huffing and puffing..and I dont consider anything that doesnt involve breaking a sweat a workout..
I did call a friend and ask if she'd join me for an evening run when the kids are asleep..so hopefully tonight I can break a good sweat..but evenings are hard for me b/c I'm so tired, drained, full of excuses and I also have to cook tonight for the weekend so I really do have a legitimate excuse..we'll see how tonight works out..I really hope I push myself to go..

I took some pics while making my Protein Pancake this morning..here are the steps..
Cook oatmeal with water, directions are on back of oatmeal (I use 1/2 cup dry oatmeal)
Mix into that 1/2 cup egg whites, cinammon, vanilla, extract, truvia (optional for sweetness)
Spray non-stick skillet with spray, let the pan heat up on medium heat, pour into pan
Let it sit on medium heat for 5-6 minutes, till its ready to flip and non-liquidy...flip to the other side and let it sit for another 3 minutes on other side..

And here you go..my breakfast..
Some tips:
-I buy the whole carton of eggs from Costco and in the begning of the week I separate the entire carton dividing the egg whites from the yolk. I'll save some of the yolks in a small container but this leaves with a huge container of plain egg whites, its a lot cheaper than buying those small cartons- it does take work but do it once for the week and you're done..
-To make the pancakes easier to flip and thicker, dont use so much water when cooking the oatmeal..the less liquid the better..
-If you're really in a rush you can use instant oatmeal, mix with hot water and then add the rest of the ing. to that..

I wanted to just elaborate for a minute on something I said before..evening workouts are not my thing. I've tried it many times and yes I will occasionally do an evening workout-but I find so many excuses to opt out of it...knowing this about myself- I make sure to always start my day with a workout. I know if I dont do it in this morning, it most likely will not get done. so try to map out your daily schedule- see when you have most energy, time, and convenience. Be honest with yourself about your capabilities and dont set times and goals that are unreasonable. If you're not a morning person and have a hard time just waking up in the morning- dont tell yourself you will wake up extra early to work out...if you're exhausted past 4 p.m.- dont chose evening times...find a time that works for you and your family...you know yourself best and like I said before..it all needs to come from you- so do yourself a favor and set a time that is ideal..it will make the workout much more enjoyable, achievable, and youre on step closer to reaching your ultimate fitness goal..
